easyWhy tonight. No wrappers: small pork-cabbage cakes, steamed then seared. Ginger is loud.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- pork
- cabbage
- ginger
- soy sauce
- garlic
Good if you have them, fine if you do not: scallion.
Method
- Salt the cabbage and squeeze it dry before it goes in the filling. Wet cabbage bursts the wrappers.
- Fry a teaspoon of the filling and taste it before you fill anything.
- Fry the dumplings flat side down until golden, then add water and clamp the lid on.
- Lid off at the end so the water goes and the base re-crisps. That two-stage cook is what a potsticker is.

Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
Why each of these is on the list
What the ingredients are actually doing
- pork
- The forgiving meat. Shoulder takes hours and rewards them, chops take minutes and punish you for one too many, and the fat is the flavor in both cases.
- cabbage
- Cheap, keeps for weeks, and completely different raw and cooked.
- ginger
- Bright and hot when raw, mellow and warm when cooked.
- soy sauce
- Salt with a savory backbone, so it seasons and deepens in one move.
- garlic
- Burns in seconds and turns the whole dish bitter, so it almost never goes in first.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
