Method
- Salt the cabbage and squeeze it dry before it goes in the filling. Wet cabbage bursts the wrappers.
- Fry a teaspoon of the filling and taste it before wrapping anything.
- Fry them flat side down until golden, then water in and the lid on immediately.
- Lid off at the end so the water goes and the base re-crisps. That two-stage cook is what a gyoza is.
