Method
- Three parts stock to one part egg, whisked gently and then strained. Straining is what makes it silk.
- Do not whisk air into it. Bubbles set as holes and ruin the surface.
- Steam it gently with the lid slightly ajar, and low — high heat curdles it into a honeycomb.
- It should be barely set and tremble when moved. Twelve to fifteen minutes and check early.
