Method
- The hot is white pepper and the sour is vinegar, and both go in at the end. Simmered, they lose everything.
- Mushrooms browned first and the broth built with a little cornstarch for the characteristic body.
- Eggs poured in a thin stream while stirring in one direction, off the boil, so they set in ribbons.
- Taste and correct the vinegar last. It should be sharper than seems reasonable in the pot and correct in the bowl.
