easyWhy tonight. A smear of miso dissolved with lemon and a little honey, scotch, soda. Experimental. It should taste like umami and malt, not soup. Taste before you pour a second.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- scotch
- miso
- soda
- lemon
Good if you have them, fine if you do not: honey.
Method
- Whisk a quarter-teaspoon of white miso into a spoonful of warm water until completely smooth.
- Any more than that and it is soup. It should read as savory depth rather than as miso.
- Scotch over hard ice, the miso solution in, stirred once, then soda down the side.
- Lemon peel expressed over the top. Whisky and fermented savoriness is a Japanese idea and a very good one.
An educational pour, not a reprint of a licensed spec. No allergen or alcohol-safety claim.
Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
Why each of these is on the list
What the ingredients are actually doing
- scotch
- Malt, smoke or both depending on the bottle, and it does not sit quietly under other ingredients.
- miso
- Salt and fermented depth in paste form.
- soda
- Carbonation is a texture and it is the first thing you lose.
- lemon
- Acid you add at the end, not the start.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.

Cook it, then tell the shelf what you used.
The ranking is only as honest as the shelf behind it. Empty the cream, and everything that leaned on cream should stop being offered.
