Method

  1. Warm the mug with hot water first and tip it out. A cold mug takes the drink down twenty degrees before you have tasted it.
  2. 2 oz bourbon, ½ oz lemon, a good spoon of honey, topped with hot — not boiling — water.
  3. Boiling water flashes off the alcohol and scorches the honey. Just off the boil.
  4. A clove-studded lemon wheel if you are being thorough. Stir until the honey has completely gone, or the last mouthful is syrup.
