Method
- Steep the thyme in warm honey syrup for ten minutes and strain. Woody herbs need heat to give anything up.
- Honey syrup at three parts honey to one warm water, or it will not incorporate in a cold drink.
- Bourbon, lemon and the syrup, shaken hard with plenty of ice.
- Thyme and honey are a classic pairing from the kitchen and they work identically in a glass.
