- Steep the thyme in warm honey syrup for ten minutes and strain it — woody herbs need heat, soft ones do not.
- Gin, lemon and the syrup, shaken very hard.
- Egg white if you want the texture, dry shaken first without ice for fifteen seconds.
- Thyme against juniper is herbal on herbal and it works because honey sits between them.
