easyWhy tonight. Uses the broccoli before it yellows.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- broccoli
- soy sauce
- ginger
- garlic
Good if you have them, fine if you do not: sesame oil.
Method
- Very hot pan, broccoli in dry, and left to catch color before anything wet goes in.
- A splash of water and a lid for ninety seconds to steam the stems through, then lid off and let it dry out again.
- Garlic and ginger in for thirty seconds only, then soy sauce down the side of the hot pan.
- Sesame oil off the heat. In the pan it goes bitter, and it is a finishing oil in every dish it appears in.

What the method is trying to make happen
Sequence, correction, heat and texture, equipment workarounds, scaling, and component reuse are available with this cook sheet.
An educational plan from a curated corpus. Not a nutrition, allergen, or doneness guarantee.
Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
Going wrong while you cook it? Say what it is doing and the triage will tell you what is happening, the smallest move, and the instinct to resist.

Why each of these is on the list
What the ingredients are actually doing
- broccoli
- The stalk is better than the florets and most people throw it away.
- soy sauce
- Salt with a savory backbone, so it seasons and deepens in one move.
- ginger
- Bright and hot when raw, mellow and warm when cooked.
- garlic
- Burns in seconds and turns the whole dish bitter, so it almost never goes in first.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
