easyWhy tonight. Hot pan, a lot of garlic. Stems first. It should still snap.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- broccoli
- garlic
- soy sauce
- sesame oil
Good if you have them, fine if you do not: chili flakes.
Method
- Blanch the broccoli sixty seconds in boiling water and drain it hard. That sets the color and part-cooks the stems.
- Screaming pan, oil, then the broccoli in dry — wet broccoli steams and never chars.
- Garlic in for twenty seconds only, at the end.
- Soy down the side of the pan and sesame oil off the heat, which is the rule for every stir-fry on this list.

Why each of these is on the list
What the ingredients are actually doing
- broccoli
- The stalk is better than the florets and most people throw it away.
- garlic
- Burns in seconds and turns the whole dish bitter, so it almost never goes in first.
- soy sauce
- Salt with a savory backbone, so it seasons and deepens in one move.
- sesame oil
- A seasoning, not a cooking oil.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.

Sheet-pan tofu and broccoli
Press the tofu properly, then 220C. Wet tofu never browns and browning is the entire reason to bake it rather than boil it.

Sigeumchi namul
Seasoned spinach banchan. Squeeze it dry, sesame oil, garlic, soy, seeds. Room temp. It should be a side that eats like a pickle, not a sauté.

Cold and crunchy. Smash, salt, soy, rice vinegar, garlic, sesame. Chili if you want heat. Eat soon so it stays loud.

Ginger soy greens
Expiry greens. Ginger and garlic in sesame oil, soy, kale until it darkens. Don't boil the brassica grey.
