Method
- Press the tofu properly — thirty minutes under something heavy. Wet tofu never browns and there is no way around it.
- Cube it, oil it, and roast it naked at 220C until the edges are genuinely gold. Twenty-five minutes at least.
- Broccoli on the same tray but added later, so it chars rather than dries out.
- Soy and sesame at the end, off the heat. Sauce from the start steams everything and you lose the crust you waited for.
