What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- cucumber
- soy sauce
- rice vinegar
- garlic
- sesame oil
Good if you have them, fine if you do not: chili flakes.
Method
- Smash the cucumber with the flat of a knife until it splits, then tear it into rough pieces. The ragged faces are what hold the dressing.
- Salt them and drain in a sieve for ten minutes. Skip this and you will be eating soup.
- Soy, rice vinegar, sesame oil and grated garlic whisked together.
- Dress it right before it goes out. Chili and a pinch of sugar if the vinegar is loud.

Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
Why each of these is on the list
What the ingredients are actually doing
- cucumber
- Water and crunch, which is a real job in a rich dish.
- soy sauce
- Salt with a savory backbone, so it seasons and deepens in one move.
- rice vinegar
- The gentlest acid on the shelf — sour without the harsh edge of wine vinegar, which is why it works in dressings that go on raw vegetables.
- garlic
- Burns in seconds and turns the whole dish bitter, so it almost never goes in first.
- sesame oil
- A seasoning, not a cooking oil.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.

Shares cucumber, sesame oil, rice vinegar
Sesame smashed cucumber
Smash rather than slice, so the ragged surfaces hold the dressing. Salt and drain first or it waters itself down.
Shares cucumber, rice vinegar, garlic
Spicy cucumber salad
Salt the cucumber first. Heat and sesame, not a pickle jar.
Shares rice vinegar, sesame oil, soy sauce
Sesame cabbage salad
Salt it, squeeze it, then dress it. Skipping the squeeze is why most cabbage salads are a puddle within twenty minutes.
Shares sesame oil, garlic, soy sauce
Sigeumchi namul
Seasoned spinach banchan. Squeeze it dry, sesame oil, garlic, soy, seeds. Room temp. It should be a side that eats like a pickle, not a sauté.
