easyWhy tonight. Smash rather than slice, so the ragged surfaces hold the dressing. Salt and drain first or it waters itself down.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- cucumber
- sesame oil
- rice vinegar
- garlic
Good if you have them, fine if you do not: chili oil.
Method
- Smash the cucumbers with the flat of a knife rather than slicing. The ragged torn surfaces hold dressing where a clean cut sheds it.
- Salt and drain them fifteen minutes, then pour off what collects.
- Rice vinegar, sesame oil and grated garlic whisked cold — none of this goes near heat.
- Dress at the last minute. Left sitting, they release more water and the dressing thins to nothing.
An educational plan from a curated corpus. Not a nutrition, allergen, or doneness guarantee.
Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
Why each of these is on the list
What the ingredients are actually doing
- cucumber
- Water and crunch, which is a real job in a rich dish.
- sesame oil
- A seasoning, not a cooking oil.
- rice vinegar
- The gentlest acid on the shelf — sour without the harsh edge of wine vinegar, which is why it works in dressings that go on raw vegetables.
- garlic
- Burns in seconds and turns the whole dish bitter, so it almost never goes in first.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
