Method
- Grate or dice the cucumber, salt it, and leave it in a sieve for ten minutes. It will give up a surprising amount of water.
- Squeeze it properly. Skipping this is the reason most versions of this are a thin bowl of liquid within an hour.
- Garlic grated, not chopped, so it disappears into the yogurt rather than ambushing somebody.
- Lemon, salt and mint at the end. Better after twenty minutes in the fridge than it is right away.
