easyWhy tonight. Let it sit five minutes so raw garlic calms down.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- yogurt
- garlic
- lemon
- olive oil
Good if you have them, fine if you do not: mint.
Method
- Grate the garlic to a paste with salt on the board. A chunk of raw garlic in yogurt is unpleasant an hour later; a paste is not.
- Whisk it into the yogurt with lemon and a good pinch more salt.
- Let it sit twenty minutes before you taste it again. Yogurt swallows salt and the garlic keeps getting louder.
- Olive oil over the top rather than stirred in, so it stays white and the oil is what you meet first. Good on almost everything on this site.

Why each of these is on the list
What the ingredients are actually doing
- yogurt
- Acid and creaminess together, which is why it works as a sauce with no cooking at all.
- garlic
- Burns in seconds and turns the whole dish bitter, so it almost never goes in first.
- lemon
- Acid you add at the end, not the start.
- olive oil
- Two ingredients sharing a name.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
