easyWhy tonight. Salt the cucumber, squeeze it, fold into yogurt with mint and lemon. Raita's cousin. Don't make soup.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- cucumber
- yogurt
- mint
- lemon
- garlic
Method
- Cucumber salted and drained in a sieve for ten minutes, then squeezed. This is the whole difference between thick and watery.
- Garlic grated fine into the yogurt so nobody bites into a piece of it.
- Mint chopped at the last minute. Chopped early it oxidizes black and tastes of nothing.
- Lemon and salt at the end, then twenty minutes in the fridge. It is a better bowl after a rest.

Sequence, correction, heat and texture, equipment workarounds, scaling, and component reuse are available with this cook sheet.

Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
The technique underneath this
- VinaigretteDispersing fat into acid so it stays dispersed for as long as dinner takes, which is all it has to do.separates immediately · greasy · too sharp · dull
- Building a sourSpirit, citrus and sugar in a fixed geometry, then adjusted for how strong the particular bottle in front of you is.thin and sharp · cloying · spirit disappears · no foam

Why each of these is on the list
What the ingredients are actually doing
- cucumber
- Water and crunch, which is a real job in a rich dish.
- yogurt
- Acid and creaminess together, which is why it works as a sauce with no cooking at all.
- mint
- Loud, cooling, and easily wrecked.
- lemon
- Acid you add at the end, not the start.
- garlic
- Burns in seconds and turns the whole dish bitter, so it almost never goes in first.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.

Cook it, then tell the shelf what you used.
