What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- yogurt
- rice
- mint
- garlic
- lemon
Good if you have them, fine if you do not: butter.
Method
- Temper the yogurt: whisk it with an egg and flour, then add hot broth a ladle at a time before it goes in the pot.
- Straight into the hot pot it splits into curds and the soup is finished. The tempering is not optional.
- Keep it below a boil for the rest of the cook, stirring in one direction.
- Mint bloomed in melted butter and poured over each bowl at the end.

Why each of these is on the list
What the ingredients are actually doing
- yogurt
- Acid and creaminess together, which is why it works as a sauce with no cooking at all.
- rice
- Starch that either steams or fries, and the two want opposite things.
- mint
- Loud, cooling, and easily wrecked.
- garlic
- Burns in seconds and turns the whole dish bitter, so it almost never goes in first.
- lemon
- Acid you add at the end, not the start.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
