Method
- Everything cut and within arm's reach before the pan gets hot. A stir-fry is four minutes of cooking and twenty of preparation.
- Chicken first in a screaming pan, in one layer, not moved until it releases. Then out.
- Broccoli next with a splash of water and a lid for ninety seconds, then uncovered so it dries out and chars.
- Garlic and ginger for thirty seconds only, soy down the side of the hot pan, chicken back in, sesame oil off the heat.
