Method
- Soy, grated ginger and garlic mixed, half of it on the chicken now and half kept back.
- Hot pan, chicken down, and left alone. The marinade will catch, so keep the heat moderate rather than high.
- Turn once, then the reserved sauce in at the end with a splash of water to lift the pan.
- Sesame oil off the heat — it is a finishing oil and cooking it kills the smell that made you buy it.
