Method
- Blister the beans in hot oil first, unmoved, until the skins wrinkle. Six or seven minutes and worth the patience.
- The chili paste fried separately in oil until it darkens and the oil turns red.
- Beans tossed through it at the end for a minute only.
- Lime and soy off the heat. It should be hot, sweet and sour all at once.
