easyWhy tonight. Blister, then season. Not boiled.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- green beans
- garlic
- olive oil
- soy sauce
Good if you have them, fine if you do not: sesame seeds.
Method
- Dry beans into a dry, very hot pan with no oil at all for the first minute, until they blister and spot black.
- Only then the oil and the garlic, for thirty seconds.
- Soy around the edge of the pan rather than over the top, so it caramelizes instead of steaming.
- They should still snap. Blistered is a texture and boiled-then-fried is not the same thing.
An educational plan from a curated corpus. Not a nutrition, allergen, or doneness guarantee.
Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
Why each of these is on the list
What the ingredients are actually doing
- green beans
- They want either a very short cook or a very long one.
- garlic
- Burns in seconds and turns the whole dish bitter, so it almost never goes in first.
- olive oil
- Two ingredients sharing a name.
- soy sauce
- Salt with a savory backbone, so it seasons and deepens in one move.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
