Method
- Dry-fry means no liquid: the beans go into hot oil and blister until the skins wrinkle and go leathery.
- That wrinkling is the point and it takes longer than you expect — six or seven minutes, unmoved.
- Pork and garlic in only once the beans are done, for a minute at the end.
- Soy down the side of the pan. Anything wet earlier and the beans steam instead of blistering.
