Method
- Chili flakes, sliced garlic and a pinch of salt in a heatproof bowl. Oil heated until it shimmers, then poured over.
- The oil should sizzle on contact and stop within seconds. Smoking oil scorches the flakes and the whole bowl tastes burnt.
- Soy sauce and a little sesame oil stirred in after the oil has calmed down.
- Hot noodles straight in, tossed hard. A spoonful of the noodle water makes it cling instead of pooling at the bottom.
