Method
- Soy sauce, sesame oil, grated garlic and ginger, and a spoonful of sugar whisked in a bowl big enough to hold the noodles.
- Sesame oil is a finishing oil. Cooked, it goes bitter and flat, so it belongs in the sauce and never in the pan.
- Rinse the noodles cold if you are serving them cold, hot into the bowl if hot. Rinsing takes the starch off so they stay separate.
- Toss and taste. It should be saltier than you would drink and sharper than you expect — the noodles mute all of it.
