Method
- Onion in a generous amount of olive oil until soft, then garlic and the tomato, cooked down until the oil separates.
- Beans in, a splash of water, lid on, and then cook them far longer than a modern recipe would tell you — forty minutes, until they are olive-drab and completely soft.
- This is the point of the dish and the part people get wrong: crisp-tender green beans are a different, worse dish. These should collapse.
- Off the heat, more raw olive oil and a squeeze of lemon. Better warm than hot, and better still tomorrow.
