Method
- Onion in olive oil until soft, then garlic and paprika for thirty seconds until they smell toasted rather than dusty.
- Tomato in, and cook it down until it darkens and the oil separates out. This is the step people skip and then wonder why it tastes thin.
- Chickpeas and a splash of their liquid. Simmer twenty minutes, crushing a handful against the side to thicken it.
- Finish with a lot of olive oil and lemon. It should taste rich and sharp at once, not like a healthy dinner.
