Method
- Onion cooked in a lot of olive oil until deeply browned. Twenty minutes. Undercooked onion is why the finished pot tastes thin.
- Garlic and chili in, then the chickpeas with a good amount of their liquid.
- Simmer and crush about half of them against the pot until it thickens to a loose purée.
- Salt hard, finish with raw oil, and eat it with bread. It is better with a spoonful of the oil poured over rather than stirred in.
