- Toast the cumin seed dry until it smells like a spice market, then into the oil with the onion.
- Garlic, then the chickpeas, drained but not rinsed to death.
- Fry them hard enough that some blister and split. A soft chickpea is a side dish; a blistered one is worth eating.
- Lemon and a lot of salt off the heat. Good cold from the fridge, straight from the bowl, standing up.
