Method
- Onion and garlic soft, then turmeric and cumin into the fat until the pan smells of them. Thirty seconds, and stir, because turmeric burns fast.
- Chickpeas in and turned through the spice paste before any coconut milk. Coat first, then loosen.
- Coconut milk in, and a bare simmer only. Boiled hard it splits into oil and grit.
- Fifteen minutes, then lime and salt. Mash a spoonful of the chickpeas into the sauce to thicken it without any flour.
