Method
- Fry the tomato paste in oil with the cumin until it darkens from red to brick. Two minutes, and it is the whole flavor base.
- Undercooked paste tastes tinny and raw; cooked properly it tastes like a sauce that simmered for an hour.
- Chickpeas turned through the paste before any coconut milk, so they are coated rather than floating.
- Coconut milk in and a bare simmer only. Boiled hard it splits into oil and grit.
