What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- chickpeas
- spinach
- tomato
- cumin
- garlic
Good if you have them, fine if you do not: coconut milk.
Method
- Cumin bloomed in fat with the onion, then garlic, then tomato cooked down hard until the pan darkens.
- That reduction is the step people rush, and it is the difference between a curry and chickpeas in tomato sauce.
- Chickpeas turned through the sauce so they are coated before any liquid goes in.
- Spinach in at the very end, wilted for two minutes only. Any longer and it goes grey and stringy.

Why each of these is on the list
What the ingredients are actually doing
- chickpeas
- Nutty and sturdy, and they take on whatever they are cooked in rather than adding much of their own.
- spinach
- Volume that vanishes. A pan-filling pile cooks down to a few spoonfuls, and the water it gives up will dilute whatever it lands in unless you wring it out first.
- tomato
- Sweet, sour and savory at once, which is why it holds up so many dishes with no meat in them.
- cumin
- Earthy and slightly bitter, and it needs heat to open.
- garlic
- Burns in seconds and turns the whole dish bitter, so it almost never goes in first.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.

Cumin chickpeas

Palak with ricotta
Ricotta stands in for paneer. Brown it first so it is not just dairy in greens.
