Method
- Fry the tomato paste with rosemary and garlic in oil until it darkens. Two minutes, and it is the whole base.
- Blend a third of the chickpeas with some of their liquid and stir it back — that is what makes it creamy.
- Cook the pasta IN the pot rather than separately, so its starch stays in the dish.
- It should be thick and spoonable, not soupy. Good oil and black pepper at the table.
