What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- pasta
- chickpeas
- garlic
- olive oil
- chili flakes
Good if you have them, fine if you do not: parsley.
Method
- Dry the chickpeas and blister a handful in hot oil until they split and crisp, then keep them for the top.
- Crush the rest into the garlic oil so they become the sauce rather than sitting in it.
- Pasta water in generously — chickpeas drink liquid and the sauce tightens fast.
- Chili and parsley off the heat, crisp chickpeas over the top so they still crunch.

Why each of these is on the list
What the ingredients are actually doing
- pasta
- The sauce finishes on the pasta, not the other way around.
- chickpeas
- Nutty and sturdy, and they take on whatever they are cooked in rather than adding much of their own.
- garlic
- Burns in seconds and turns the whole dish bitter, so it almost never goes in first.
- olive oil
- Two ingredients sharing a name.
- chili flakes
- Heat you can dose. Bloomed in oil they spread through everything; scattered at the table they stay sharp and sit on top. Same flakes, two different dishes.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.

Pantry olive garlic pasta
If the tomato is gone, olives still make a sauce.
Shares pasta, garlic, chili flakes
Arrabbiata
Angry tomato. Chili and garlic in oil, tomato, pasta water. Parsley. It should hurt a little. Don't make marinara and add a pinch of flakes at the end.

The can is the point. Chili and parsley, not cream.

Cook it, then tell the shelf what you used.
The ranking is only as honest as the shelf behind it. Empty the cream, and everything that leaned on cream should stop being offered.
