Method
- Toast the panko in olive oil in a separate pan until deep gold, then tip it out. Left in, it goes soft immediately.
- Sliced garlic warmed slowly in oil until it just turns gold. Stop before brown, which is bitter.
- Pasta in dripping wet with its water, tossed until oil and starch turn creamy.
- Crumbs over the top at the table rather than stirred in, so they still crunch. Parsley and chili at the end.
