Method
- Tomato paste fried in olive oil with the garlic until it darkens from red to brick. This is the whole trick and it takes two minutes.
- Undercooked paste tastes tinny and raw; cooked properly it tastes like a sauce that simmered for an hour.
- Pasta water in to let it down to a sauce, then simmered a couple of minutes to come together.
- Pasta in and tossed hard, then basil and parmesan off the heat. A pinch of sugar only if the paste is sharp.
