Method
- A generous pour of olive oil, sliced garlic, and the anchovies straight into cold oil over low heat.
- Push the anchovies apart with a spoon until they melt completely. Once they have dissolved nobody will identify them and everybody will notice they are there.
- Chili flakes at the end of the infusion, off the heat, so they perfume rather than scorch.
- Pasta in dripping wet with a good splash of its water, tossed until the oil and starch turn creamy. Salt last, if at all.
