Method
- Anchovies and sliced garlic into olive oil over low heat. Push the anchovies with a spoon until they dissolve — that is the dish's salt, not a topping.
- Capers, chopped olives, chili flakes, then tomatoes. Simmer hard enough to thicken, ten to fifteen minutes.
- Taste before you salt. Between the anchovy, the olives and the capers this is usually seasoned already, and this is the one sauce where people go too far.
- Drain the pasta into the pan, not the sink, and finish it in the sauce for a minute so it takes some on.
