Method
- Anchovies melted into olive oil with sliced garlic over low heat until they disappear completely.
- Broccoli cooked in the same pan with a splash of pasta water and a lid, then pushed against the pan until it breaks down.
- Broken-down broccoli is the sauce here. Neat florets are a side dish that got lost in a bowl of pasta.
- Chili and pasta water to loosen. Taste before salting; the anchovy has almost certainly done it.
