Method
- Anchovies melted into olive oil with sliced garlic over low heat until they disappear completely.
- Cauliflower cut small and cooked in that oil until it is properly brown at the edges — fifteen minutes, and worth every one.
- Crush about a third of it against the pan so it becomes the sauce rather than an ingredient sitting in one.
- Pasta water, chili flakes, pasta in. Taste before salting; the anchovy has usually done it.
