Miso glazed salmon
Glaze at the end so it does not burn.
The sheet · 2 fillets · 18 min
easyWhy tonight. Glaze at the end so it does not burn.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- salmon
- miso
- maple
- rice vinegar
Good if you have them, fine if you do not: scallion.
Method
- Whisk the miso, maple and rice vinegar into a glaze that just coats a spoon.
- Dry the salmon, salt it lightly — the miso is already salt, so go easy.
- Most of the way through in a moderate oven or pan, plain. Then glaze and give it two minutes under a broiler.
- Glazing early is how this ends up black. Sugar and miso both burn well before the fish is done, so the glaze goes on last.

What the method is trying to make happen
Sequence, correction, heat and texture, equipment workarounds, scaling, and component reuse are available with this cook sheet.
An educational plan from a curated corpus. Not a nutrition, allergen, or doneness guarantee.
Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
Going wrong while you cook it? Say what it is doing and the triage will tell you what is happening, the smallest move, and the instinct to resist.
Published minimums for what is in this
These are published minimums, not doneness preferences and not a verdict about any particular piece of food. Ground meat sits above whole cuts of the same animal because grinding moves the surface through the middle — the species is not the reason.

Why each of these is on the list
What the ingredients are actually doing
- salmon
- Fatty enough to forgive a lot, but not overcooking.
- miso
- Salt and fermented depth in paste form.
- maple
- Sweetness with a mineral, slightly smoky edge that sugar does not have.
- rice vinegar
- The gentlest acid on the shelf — sour without the harsh edge of wine vinegar, which is why it works in dressings that go on raw vegetables.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
Cooks from the same box
If you bought for this, you can already make these
Shares miso, rice vinegar
Miso tahini noodles
Loosen with pasta water. Taste for salt.
Shares salmon, maple
Maple glazed salmon
Maple and soy, ginger. Lacquer at the end so it doesn't burn. The fish should still flake.
Shares miso, maple
Miso roasted sweet potato
Roast it naked first, glaze in the last four minutes. Miso and maple both burn fast, and sweet potato is already sweet.
Shares rice vinegar
Chili oil soy dip
For dumplings, eggs, or leftover rice.
Next
Cook it, then tell the shelf what you used.
The ranking is only as honest as the shelf behind it. Empty the cream, and everything that leaned on cream should stop being offered.
