easyWhy tonight. Loosen with pasta water. Taste for salt.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- pasta
- miso
- tahini
- rice vinegar
- scallion
Good if you have them, fine if you do not: sesame seeds.
Method
- Whisk the miso and tahini together with warm water before anything acidic. Both seize on contact with acid.
- Rice vinegar in slowly once it is smooth, then thinned to a consistency that pours off the spoon.
- Two fermented, savory, slightly bitter things stacked — which is why this needs no soy sauce and usually no salt.
- Sauce the noodles at the last minute. Tahini sets solid as it cools and a bowl dressed early is a block.

What the method is trying to make happen
Sequence, correction, heat and texture, equipment workarounds, scaling, and component reuse are available with this cook sheet.
An educational plan from a curated corpus. Not a nutrition, allergen, or doneness guarantee.
Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
The technique underneath this
Going wrong while you cook it? Say what it is doing and the triage will tell you what is happening, the smallest move, and the instinct to resist.

Why each of these is on the list
What the ingredients are actually doing
- pasta
- The sauce finishes on the pasta, not the other way around.
- miso
- Salt and fermented depth in paste form.
- tahini
- Sesame paste that behaves like a fat and an emulsifier at once.
- rice vinegar
- The gentlest acid on the shelf — sour without the harsh edge of wine vinegar, which is why it works in dressings that go on raw vegetables.
- scallion
- Two ingredients on one stalk.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
