Method
- Reduce the maple, soy and ginger separately until syrupy before it goes near the fish.
- Sear the salmon skin-side down, dry and unglazed, and leave it until the skin releases.
- Glaze only in the last minute. Sugar in the pan from the start burns long before the fish is cooked.
- Pull it while the center still looks slightly translucent. Scallion at the end.
