Method
- Reduce the soy, sugar and ginger into a glaze in a separate pan first, until it coats a spoon.
- Sear the salmon skin-side down, dry and unsauced, and leave it alone until the skin releases.
- Glaze only in the last minute. Sugar in the pan from the start burns black long before the fish is done.
- Pull the fish while the center still looks slightly translucent. It finishes on the plate.
