easyWhy tonight. Swizzle on crushed ice. Bitters keep the pineapple adult.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- rum
- lime
- pineapple
- angostura
Good if you have them, fine if you do not: simple syrup.
Method
- Crushed ice, always. A swizzle is defined by the ice and by the stick you spin in it.
- Build everything in the glass, then swizzle with a bar spoon held between your palms until the outside frosts.
- That frost is the signal. It is doing the chiling and the dilution at once and it takes about twenty seconds.
- Bitters dashed over the top at the end so they sit as a dark layer rather than mixing in.

Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
Why each of these is on the list
What the ingredients are actually doing
- rum
- The widest spirit on the shelf.
- lime
- Sharper and more floral than lemon, and it fades faster — juice it the same hour you use it.
- pineapple
- Sweet and aggressively acidic, and the raw fruit contains an enzyme that breaks down protein — useful in a marinade, ruinous in anything set with gelatin.
- angostura
- Bitters are seasoning for a drink — the salt of the bar.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.

Corn 'n' oil
Barbadian: dark rum, a spoon of molasses, lime, bitters. Stir. It should look like oil and taste like lime, not gingerbread.

Jungle Bird
Campari and rum with pineapple, which is the only tiki drink that is genuinely bitter. Pineapple juice foams if you shake it hard, and it should.

Planter's punch
Rum, citrus, sugar, bitters. Fruit juice is a guest, not the drink.

Queen's Park swizzle
Packed crushed ice, mint, a lot of bitters on top. Swizzle until the glass frosts.
