easyWhy tonight. Rum, citrus, sugar, bitters. Fruit juice is a guest, not the drink.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- rum
- lime
- orange
- simple syrup
- angostura
Good if you have them, fine if you do not: pineapple.
Method
- One of sour, two of sweet, three of strong, four of weak — the same rhyme as the punch bowl, built in a single glass.
- Dark Jamaican rum, lime, syrup and water or juice over crushed ice.
- Angostura floated on top in quantity — a good six dashes, which sounds like too many and is not.
- Grate nutmeg over it. Between the bitters and the nutmeg, the aroma is half the drink.
An educational pour, not a reprint of a licensed spec. No allergen or alcohol-safety claim.
Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
Why each of these is on the list
What the ingredients are actually doing
- rum
- The widest spirit on the shelf.
- lime
- Sharper and more floral than lemon, and it fades faster — juice it the same hour you use it.
- orange
- Sweeter and rounder than lemon and lime, so it softens rather than sharpens.
- simple syrup
- Sugar already dissolved, which is the only form of sugar that works in a cold drink.
- angostura
- Bitters are seasoning for a drink — the salt of the bar.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.

If you bought for this, you can already make these
Shares rum, lime, simple syrup
Queen's Park swizzle
Packed crushed ice, mint, a lot of bitters on top. Swizzle until the glass frosts.
Shares rum, lime, simple syrup
Daiquiri
Rum, lime, sugar, shaken hard and served up. It is the best value in cocktails and nothing about it should be frozen or pink.
Shares rum, lime, angostura
Corn 'n' oil
Barbadian: dark rum, a spoon of molasses, lime, bitters. Stir. It should look like oil and taste like lime, not gingerbread.
Shares rum, lime, simple syrup
Jungle Bird
Campari and rum with pineapple, which is the only tiki drink that is genuinely bitter. Pineapple juice foams if you shake it hard, and it should.
Next
Cook it, then tell the shelf what you used.
The ranking is only as honest as the shelf behind it. Empty the cream, and everything that leaned on cream should stop being offered.
