mediumWhy tonight. Campari and rum with pineapple, which is the only tiki drink that is genuinely bitter. Pineapple juice foams if you shake it hard, and it should.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- rum
- campari
- pineapple
- lime
- simple syrup
Method
- 1½ oz dark rum, ¾ oz Campari, 1½ oz pineapple juice, ½ oz lime, ½ oz simple syrup. Shake, strain over fresh ice.
- Campari in a tiki drink sounds wrong and is the entire reason this one survived — the bitter is what keeps pineapple from being a soft drink.
- Fresh pineapple juice froths beautifully; canned does not and it shows.
- The only tiki drink on this list you can serve to somebody who says they do not like tiki drinks.

Why each of these is on the list
What the ingredients are actually doing
- rum
- The widest spirit on the shelf.
- campari
- Bitter, sweet and red, and it is not shy.
- pineapple
- Sweet and aggressively acidic, and the raw fruit contains an enzyme that breaks down protein — useful in a marinade, ruinous in anything set with gelatin.
- lime
- Sharper and more floral than lemon, and it fades faster — juice it the same hour you use it.
- simple syrup
- Sugar already dissolved, which is the only form of sugar that works in a cold drink.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.

Shares rum, lime, simple syrup
Daiquiri
Rum, lime, sugar, shaken hard and served up. It is the best value in cocktails and nothing about it should be frozen or pink.

Chartreuse swizzle
Chartreuse with pineapple and lime over crushed ice, swizzled until the glass frosts. Bright green and much drier than it looks.
Shares rum, lime, simple syrup
Mojito
Rum, lime, sugar and mint over crushed ice. Slap the mint to wake it rather than muddling it into bitter green shreds.

Planter's punch
Rum, citrus, sugar, bitters. Fruit juice is a guest, not the drink.

Cook it, then tell the shelf what you used.
The ranking is only as honest as the shelf behind it. Empty the cream, and everything that leaned on cream should stop being offered.
