mediumWhy tonight. Chartreuse with pineapple and lime over crushed ice, swizzled until the glass frosts. Bright green and much drier than it looks.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- chartreuse
- pineapple
- lime
- simple syrup
Method
- 1½ oz green Chartreuse, 1 oz pineapple, ¾ oz lime, ½ oz falernum or simple syrup.
- Pour over a glass packed with crushed ice and swizzle with a spoon until the outside frosts.
- The swizzle is the technique: it chills and dilutes at once, which a herbal liqueur at 55% badly needs.
- Mint on top. It is the rare drink where Chartreuse is the base rather than the accent, and it works because pineapple can take it.

Why each of these is on the list
What the ingredients are actually doing
- chartreuse
- Enormously herbal and enormously strong, made to a recipe almost nobody knows.
- pineapple
- Sweet and aggressively acidic, and the raw fruit contains an enzyme that breaks down protein — useful in a marinade, ruinous in anything set with gelatin.
- lime
- Sharper and more floral than lemon, and it fades faster — juice it the same hour you use it.
- simple syrup
- Sugar already dissolved, which is the only form of sugar that works in a cold drink.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.

Shares pineapple, lime, simple syrup
Jungle Bird
Campari and rum with pineapple, which is the only tiki drink that is genuinely bitter. Pineapple juice foams if you shake it hard, and it should.
Shares lime, simple syrup
Gimlet
Gin, fresh lime, sugar. Cordial makes it a different and worse drink, and shaking rather than stirring is correct here.
Shares lime, simple syrup
Vodka gimlet
Gin removed, so lime and sugar are the whole drink. It lives or dies on the lime being squeezed that day.
Shares lime, simple syrup
Daiquiri
Rum, lime, sugar, shaken hard and served up. It is the best value in cocktails and nothing about it should be frozen or pink.

Cook it, then tell the shelf what you used.
The ranking is only as honest as the shelf behind it. Empty the cream, and everything that leaned on cream should stop being offered.
