Method
- 2 oz white rum, ¾ oz lime, ¾ oz simple syrup. Shake hard, ten seconds, until it hurts to hold the tin.
- Double-strain up into a cold coupe.
- Nothing frozen, nothing pink. This is three ingredients and a technique, and it is the drink to make when you want to know whether somebody can actually mix.
- Underdilution is the usual fault: if it tastes sharp and hot at once, you did not shake it long enough.
