Method
- Onion soft, then cumin and chili into the dry fat for thirty seconds. Bloomed in fat they taste like spices; stirred into liquid they taste like dust.
- Tomato in and cooked down hard before any other liquid, until the pan darkens and smells sweet rather than sharp.
- Beans with some of their liquid, then thirty minutes at a bare simmer minimum. There is no fast chili.
- Mash a ladleful against the pot and stir it back for body. Salt and lime at the end, cheddar on top.
