Method
- Turkey is lean and will go dry, so brown it hard in a hot pan rather than letting it stew grey in its own liquid.
- Spices into the fat before the meat is fully cooked through, so they toast rather than steam.
- Tomato cooked down, then a long low simmer. Lean meat needs the time more than beef does, not less.
- A spoonful of something rich at the end — cheddar, sour cream, even a pat of butter. Lean chili tastes thin without added fat.
